Maggie's Coconut Rice
Serve with curries, plain cooked chicken, or lemon baked fish
Steps
In a 2-quart pot bring the water and salt to a boil.
Stir in the dry rice , cinnamon , and the coconut.
Stir and return the water to a boil.
Reduce the heat to the lowest possible flame.
Place the lid on the pot and simmer for 20 minutes.
Do not peek while the rice is cooking.
