Fresh Vegetable Skillet Dinner


A simple, delicious meatless main dish or side dish. From juanita's, little rock, ar.

Steps


Melt butter in a big skillet over medium-high heat.
Add in the onion slices.
Cook for 5 minutes and stir frequently.
Add the squash and bell pepper.
Cook for 3-5 minutes and stir frequently.
Add tomato wedges , salt , and pepper.
Cover , lower heat , and simmer 5-10 minutes.
Put spinach leaves over vegetable mixture , cover and cook over low heat for 3 more minutes.
Add cheese.
Cover and cook 2 minutes or until spinach is wilted and cheese is melted.
Serve immediately.
