Artichoke Heart Frittata


Great brunch dish, or for a light supper.

Steps


Cook the first 5 ingredients in hot oil in a large skillet over medium-high heat , stirring constantly , until the vegetables are crisp-tender.
Combine the eggs , milk , salt , and pepper in a large bowl.
Stir well.
Gently stir artichoke mixture , bread cubes , cream cheese cubes , and cheddar cheese into the egg mixture.
Pour the egg mixture into a greased 9 inch pie plate.
Bake at 350 degrees for 40 to 45 minutes , or until golden.
Let stand 5 minutes before serving.
