Fluffy Delicious Biscuits
These take a little time, but they are well worth it!!
Steps
In a small bowl , dissolve yeast in warm water.
Let stand until creamy , at least five minutes , perhaps as long as thirty.
Add buttermilk to yeast mixture and set aside.
In a large bowl , combine flour , sugar , baking powder , baking soda , and salt.
Cut in shortening with a pastry blender until mixture resembles coarse meal.
Stir in yeast mixture until dry ingredients are moistened.
Turn dough out onto a floured surface , and knead four or five times.
On a lightly floured surface , roll dough to a thickness of inch.
Cut out biscuits with a 2 inch round cutter.
Gently place the biscuits on lightly greased baking sheets , so that they barely touch each other.
Cover and let rise in a warm place free from drafts for one hour , or until nearly doubled in size.
Preheat oven to 425f.
Bake in preheated oven for 10-12 minutes , or until browned', hint: if you don't have buttermilk - simply add 2 tablespoons of lemon juice or vinegar to just enough milk to make 2 cups"]".
