Trimlestown Roast Sirloin
I found this on a web site for irish recipes - it's a little different from the traditional roast beef and gravy.
Steps
Roast the sirloin for one hour at 350 degrees.
Baste with whiskey and wine and cook another hour , basting frequently.
Remove roast from oven , place on a serving dish , and cover with foil.
While the roast is sitting , add water to the juices to make one pint of liquid.
Bring to a simmer and add butter and flour.
Simmer 2-3 minutes.
Slice the roast and serve with gravy.

sirloin tip roast, whiskey, red wine, butter, flour, salt and pepper
