Spinach Cheese Puffies
A perfect appetizer for your next family gathering or party. A make ahead recipe that is quick, easy and delicious. I would suggest serving the puffies with dorothy parks' horseradish cream (recipe #13326). Prep time includes refrigeration.
Steps
In a medium bowl , beat eggs and add remaining ingredients and mix well.
Cover and refrigerate 1 hour or until mixture is firm enough to form into balls.
Shape spinach mixture into 1 inch balls and place on buttered cookie sheets , cover and refrigerate or freeze until serving time.
Bake refrigerated puffies on a greased cookie sheet at 350f for 12-15 minutes , 18-20 minutes if frozen , and serve warm.

eggs, frozen chopped spinach, onion, garlic, cheddar cheese, bleu cheese salad dressing, butter, corn muffin mix
