A Yam A Day
I invented this to go with a lamb and gravy dish. Yams/sweet potatoes, like carrots, winter squashes and orange colored fruits are anti-oxidants that help to prevent cancer. Personally, i don't like the overly sweet versions of yams served on holidays. This is a super quick dish that goes well with meat and poultry every day!!
Steps
Microwave butter in a microwave safe dish , 30 seconds or until melted.
Add scallions , yams and pepper.
Stir gently , cover with plastic wrap and microwave at full power for 3-4 minutes or until hot.
