Southwest Meatloaf

This is a unique meatloaf recipe. very moist. my friend gave me this recipe and i know she got it out of a magazine but neither one of us know which one! it called for more cilantro and onions and i did cut these back. this is not a pretty meatloaf....just a great tasting one!!

Steps

Mix all ingredients together well.

Bake at 350f for 45 minutes.

Increase oven temperature to 425f.

Bake for 15 minutes more.

---

Let rest 10 minutes before serving.

ground beef, eggs, breadcrumbs, garlic cloves, red onion, plum tomatoes, monterey jack cheese, brown sugar, cilantro, worcestershire sauce, hot sauce, salt, pepper
