Rich Lentil And Ham Soup


A delicious rich and healthy soup that really makes a complete meal.

Steps


Mince celery , carrot , onion and garlic.
Heat up olive oil to medium high heat in a large cooking pot or dutch oven.
Sautee vegetables for 5-7 minutes stirring constantly careful not to burn.
Add stock , water , ham hock , bay leaves and lentils bring to a boil and then simmer for at leat 1 hour.
Add can of tomatoes , diced ham , spices , vinegar , salt and pepper to taste and cook for another 20 minutes.
Remove ham hock and discard.
Serve soup and enjoy !.
