Lively Lentils
Lentils are such a good-for-you food, and served over brown rice, make a complete meal. this recipe is a combination of several, and has a wonderful sweet and spicy flavor. add water if they become too thick. leftovers can be frozen.
Steps
Bring lentils to a boil in the water and simmer 25 minutes.
In a skillet , saute onion and green pepper in oil until soft.
Add to lentils , along with all other ingredients.
Simmer an additional 20 minutes until lentils are cooked , but not mushy.
