Leek Soup
Don’t let the name scare you! this soup is healthy and delicious. the original recipe called for creaming half of the soup, but we like it better chunky.
Steps
Heat a 4-quart soup pot over medium heat and add the oil.
When oil is hot , ad the leeks , onion , and salt.
Saut for about 5 minutes , stirring often , until the onion begins to turn translucent.
Add the garlic and stir well.
Cook for another minute or so.
Add the potatoes and vegetable stock.
Cover and bring to a boil.
Reduce heat and simmer 20 minutes.
