Honeyed Asparagus Bundles
Entered for safe-keeping. From first 3/09/09. this was a big hit when it was originally printed in 2009. this has different proportions of ingredients from a similar recipe recipe #66680 #66680.
Steps
Using channel knife , cut 8 strips from lemon peels.
Juice lemons.
In bowl , whisk together lemon juice , mustard and honey.
Gradually whisk in olive oil.
Stir in tarragon.
Arrange asparagus into 8 piles.
Using lemon-peel strips , tie asparagus piles into bundles.
Set bundles in steamer basket over large saucepot of simmering water.
Steam bundles 3 minutes , or until stalks are crisp tender.
Using tongs , remove bundles from basket.
Season with salt and black pepper , if desired.
Drizzle with dressing.
