Greek Mediterranean Pizza
I came up with this lactose-free pizza, and in my opinion it tastes great - you could potentially use it as an appetizer, or as a meal itself. The texture is a bit different, so it might be better to think of it more as an appetizer than as pizza. I used the pizza dough recipe from 'cheese pizza' in the 'more with less' cookbook. Servings/yield is very dependent on how much dough you use, and how much you want to make. Adjust ingredients accordingly.
Steps
Prepare pizza dough.
Stretch it to fit the pan , creating as thick or thin a crust as you wish.
Place pizza dough in greased dish / baking tray with a little bit of cornmeal sprinkled on the bottom.
Spread hummus onto the dough in the pan.
Fry chicken in a pan with a little bit of oil , italian seasoning , and salt.
Once the chicken is cooked through , place evenly over pizza.
Spread red pepper and red onion evenly over pizza.
Bake in a 350 degree oven for 10-13 minutes or until crust is golden brown on sides and bottom.
