Easy Butternut Squash Soup


Simple to make and really tasty veggie/vegan soup. Adjust the amount of chili and garlic to your own taste.

Steps


Wash and dice the butternut squash.
Deseed the chili.
Peel the garlic.
Place all 3 on a baking tray.
Sprinkle olive oil over.
Place in the oven at 180 for about 40 minutes or until the squash is cooked.
Bring the stock to the boil.
Add the baked ingredients.
Blend with a stick blender.
Season to taste.
