Crusty Dill Garlic Salmon
A quick and easy method for cooking salmon adapted from a national seafood educators recipe. Boneless cod, butterfly cut large shrimp, or halibut may also be prepared using this recipe.
Steps
Combine lemon juice , wine , olive oil and salmon fillets in a large ziploc bag.
Seal bag and marinate in refrigerator for 1 hour , turning occasionally.
Remove salmon fillets from bag and discard marinade.
Place fillets in a lightly oiled baking dish.
Toss bread crumbs , spices , olive oil , and lemon juice together in a small bowl.
Spread crumb mixture evenly over top and sides of salmon , pressing lightly to hold crumbs in place.
Bake at 400 for 12 minutes or until fish flakes easily when tested with a fork.
