Cream Of Quinoa Mushroom Soup
I found this recipe on another site, going on my 'have-to-try' list!!
Steps
Heat a medium saucepan , sprayed with cooking spray.
Cook the shallots until tender.
Add the mushrooms , cover and cook for 5 minutes or until tender.
Add the quinoa and broth and bring the liquid to a simmer.
Season to taste with salt and pepper and stir in non-fat evaporated milk.
Bring back up to a simmer , remove from heat and stir in the dill.

nonstick cooking spray, shallots, mushrooms, cooked quinoa, fat-free vegetable broth, fat-free evaporated milk, salt & freshly ground black pepper, fresh dill
