Chili Spiced Bean Salad


From sunset vegetarian cooking cookbook. please add at least four hours for chilling.

Steps


Combine all salad ingredients together except for the lettuce.
Make dressing by combining all the ingredients in a small bowl , and stirring well.
Pour dressing over salad , and mix lightly.
Cover and refrigerate for 4 hours or overnight.
Stir lightly before serving on lettuce leaves.

red kidney beans, pinto beans, chickpeas, whole kernel corn, celery, green onions, parsley, diced green chilies, lettuce leaf, salad oil, wine vinegar, garlic clove, salt, chili powder, dried oregano, ground cumin, pepper
