Amazing Pumpkin White Chocolate Chip Cookies
This recipe is from a cookbook called old-fashioned christmas cookies...it is amazing! the cookies have a wonderful soft, cake-like consistency and the cream cheese frosting adds a nice touch of richness. i love making these during the holidays and they always receive rave reviews.
Steps
Preheat oven to 375f grease cookie sheets.
Beat butter and granulated sugar in large bowl until light and fluffy.
Add pumpkin and eggs.
Beat until smooth.
Add flour , pumpkin pie spice , baking powder and baking soda.
Beat until just well blended.
Stir in white chocolate chips.
Drop dough by teaspoonfuls about 2 inches apart onto prepared cookie sheets.
Bake about 16 minutes or until set and bottoms are slightly brown.
Cool 1 minute on cookie sheets.
Remove to wire rack to cool.
Frosting: combine cream cheese frosting and brown sugar in a small bowl.
Spread frosting on warm cookies.
