Chicken Chowder
Steps
Combine first 3 ingredients in a dutch oven.
Bring to a boil.
Cover , reduce heat and simmer 30 to 45 minutes or until chicken is tender.
Remove chicken from broth , reserving 3 cups broth in dutch oven.
Remove the meat from the bones and cut into bite size pieces.
Set aside.
Add potatoes and carrots to broth.
Bring to a boil , cover , reduce heat , and simmer 10 to 15 minutes.
Add chicken , corn , diced tomatoes , pepper , and optional tarragon.
Cover and simmer 15 minutes or until vegetables are tender , stirring occasionally.
