Steps
Spice paste:.
In a food processor , combine ingredients and process until smoooth.
Transfer to a small bowl.
Curry:.
In a wok or large skillet , heat oil over medium heat and fry spice mixture until fragrant.
Add apricots and chicken: cook for 1 minute.
Stir in stock , cover and simmer until tender.
Spoon into serving bowls and garnish with the extra cashew nuts and coriander.
Serve with steamed rice.
