Bugeah's Peanut Chicken
Thai-style peanut sauce with rice, chicken, and veggies. A one-dish meal that the whole family will love!!
Steps
Mix peanut sauce ingredients and set aside.
Heat 2 tbs peanut oil in a large skillet or wok on medium-high heat.
Add chicken and cook until chicken is cooked through.
Remove from skillet and set aside.
Heat remaining 2 tbs of peanut oil in the skillet.
Add veggies and saute until tender crisp.
Toss the veggies with the chicken and peanut sauce , then serve over rice.
You should have plenty of leftover sauce for that.
