Zucchini Pizza Crust


A gluten-free crust for dieters craving pizza. Caveat emptor: it is not too much like the real deal... The recipe was from http://glutenguide.blogspot.com.

Steps


For the zucchini crust: shred two medium zucchini.
Salt and drain at least 15 minutes.
Rinse and pat dry.
Mix with two eggs , 1 cup shredded reduced fat mozzarella , 2 cloves minced garlic , and fresh ground black pepper.
Spread on a greased baking sheet and bake at 375f for 12 to 15 minutes , until light brown.
I topped with sliced tomatoes , green onions , and crumbled herbed goat cheese before broiling for a few minutes.
Then i added a few fresh basil leaves.
