Zesty Peanut Soup
I'm not entirely sure where this recipe came from. It's been a newspaper cutout in the back of mom's recipe book for years, anyway, and it's definitely one of our favorite soups. It's quick, easy, and very delicious! Hint: it's also better if it sits a little while before being devoured uncontrollably.
Steps
Saut onion , garlic and red pepper in olive oil until soft , about 5 minutes.
Add vegetable broth , water , tomatoes , rice , red pepper flakes , salt , and pepper and bring to a boil.
Simmer for 45 minutes.
Whisk in peanut butter.
Enjoy !.
