Yummy Poached Lemony Salmon
Salmon poached in liquid heaven! Poaching a process of simmering over a very low flame.
Steps
Season fillet with oregano , salt and pepper.
Heat oil in a large pan.
Saute onions , garlic and carrots for 3 minutes over medium high heat.
Sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes.
De-glaze with chicken broth , lemon juice and rind and white wine.
Place peppercorns , salmon on top cover and simmer over low flame for 7 minutes.
Top with capers and serve.
