Stuffed Papaya Boats


Papayas are native to the caribbean and usually appear on the table at breakfast or for dessert. This salad can be served as an appetizer, salad,or for breakfast.

Steps


In a small bowl , combine all ingredients except papayas.
Mix well.
Chill several hours.
At serving time , peel papayas and cut them in half lengthwise.
Scoop out and discard seeds.
Cut a very thin slice off the bottom of each half so they will remina stable on the plate.
Stir the cottage cheese mixture and mound it into the papaya shells.
Sprinkle lightly with additional cinnamon.
