Bean Cheese Casserole
I found this recipe originally in how it all vegan and modified it to my taste.
Steps
Preheat oven to 400 degrees f.
In a large pot of water , boil the sliced potatoes until they can be pierced easily with a fork.
Meanwhile , in a small bowl , stir together the bustard , beans , tomatoes , onion , and pepper , and set aside.
Drain the potatoes and place half of them into a lightly oiled casserole dish.
Add half the bean mixture on top , then half the cheese.
Repeat.
Cover and bake for 35-40 minutes.
