Bauer House Oatmeal Spice Muffins


Try these for breakfast! They are some of the best muffins i've made. Healthy and delicious, with a tender yet firm texture. I hope you enjoy them as much as we do! The original recipe comes from a bed and breakfast cookbook, but i've changed it to fit our preferences. It's very simple and gives great results. The recipe is easily halved if you have a smaller group to feed.

Steps


Stir together dry ingredients.
Beat remaining ingredients with fork , except currants.
Add to dry ingredients and stir until just combined.
Stir in currants.
Let batter sit 5-10 minutes.
Spoon into sprayed muffin cups and bake 20 minutes at 400 degrees , until golden and firm.
Remove to rack to cool slightly , then serve warm.
