Satisfying Tomato Soup
I love making tomato soup from scratch, but most recipes i have found call for way too much onion and/or spices. This version has just the right amount for our family, so i thought i'd share it. It tastes wonderful with a dollop of sour cream or a sprinkle of parmesan cheese too.
Steps
Warm oil in a saucepan over medium-high heat.
Add onion and celery , stirring constantly , until tender , about 2-4 minutes.
Stir in remaining ingredients.
Bring to a boil , reduce heat and simmer uncovered , about 10 minutes.
Puree soup using an immersion blender , or cool soup slightly and puree in batches in a blender.
Return to pan and heat through.
