Pumpkin Yes Pumpkin Soup
When offered this soup, the thought was not at all appealing to me. Pumpkin soup? i wanted to be thoughtful, so i said i would try just a little. Well, i loved it, and ended up asking for the recipe so i can make this myself. Do try it...you may be surprised!!
Steps
In large soup pan , saute onions in butter.
Remove from heat and stir in the flour until smooth.
Gradually stir in chicken broth and pumpkin.
Add brown sugar , salt , pepper , and nutmeg.
Bring to boil , then reduce to simmer for 5 minutes add heavy cream and cook an additional 2 minutes serve hot.
