Minted Gremolata Halibut

Steps
Heat oven to 400 degrees fahrenheit.
Line baking sheet with foil and spray with nonstick spray.
In medium bowl , combine first 3 ingredients , 1 tablespoon lemon juice , 1 / 2 teaspoon lemon zest , 2 tablespoons olive oil and 2 teaspoons chopped garlic.
Spread on fish.
Place fish on foil-lined baking sheet.
Roast halibut fillets 15 minutes , or until fish flakes easily with fork , turning once.
In skillet over medium heat , cook onions in remaining 2 tablespoons oil for 2 minutes.
Add 2 teaspoons chopped garlic to skillet , cook 1 minute.
Stir in spinach and cover.
Cook 2 minutes.
Arrange spinach mixture and fish on platter.
Season with salt and pepper , if desired.
