Mexi Egg Scramble Skillet
This makes a great weekend brunch, don't omit the baking powder, it makes the eggs light and fluffy, adjust the tabasco or hot sauce to taste :)
Steps
In a medium bowl combine eggs with tabasco , baking powder , salt and black pepper.
In a large skillet melt butter over medium-high heat.
Add in onion , bell pepper and fresh mushrooms.
Cook until tender.
Add in the chiles and egg mixture.
Cook stirring until the eggs just begin to set.
Sprinkle the cheese over the eggs.
Cover and cook until the eggs are just set.
