Meatless Jambalaya
This is based on the creole dish jambalaya. I change the type of beans i use, depending on what's on hand. You can also spice it up, as desired. Original recipe is from pillsbury.
Steps
Heat oil in large skillet over medium-high heat until hot.
Add onion , bell pepper and garlic.
Cook and stir 3 to 5 minutes or until crisp-tender.
Stir in water , tomatoes , tomato sauce , italian seasoning , ground red pepper and fennel seed.
Bring to a boil.
Add rice.
Reduce heat to low.
Cover and simmer 20 to 30 minutes or until rice is tender , stirring occasionally.
Stir in beans.
Cover.
Simmer and additional 5 to 10 minutes or until thoroughly heated , stirring occasionally.
